All the characteristics of the distinctive new word are captured in Mud House's South Australian wines. A beautifully structured, juicy Cabernet Sauvignon featuring black currant, mulberry and vanilla bean aromas, complemented by spicy plum flavours and a lovely, long finish.

A deep ruby red colour, with complex and dense aroma of, cassis blackberry blackcurrant, wild forest berries with fine cedar notes, oyster shell and graphite vanilla, baking spices, some cigar box notes and dark chocolate. The palate is silky and rich, with powerful mid palate tannins and concentrated blackberry, cassis, with a fine and long savoury finish.

Produced in only the best of years, this is Paritua's flagship wine. Only the very best sub blocks on the Paritua Vineyard at 2112 Maraekakaho Road have been selected to grow extremely low yielding vines. A Cabernet Sauvignon Merlot Cabernet Franc blend. The palate has great structure and layers of complexity of flavour. A silky textured attack with a plush concentrated cassis and blackberry palate, with ripe Black cherry cocoa powder and spice flavours on the mid palate, a hint of mineral elegance expressed as oyster shell with a long flavoured fine grained tannin finish. This wine will improve with cellaring.

Bin 389 is often referred to as 'Baby Grange', in part because components of the wine are matured in the same barrels that held the previous vintage of Grange. Inspired by Bin 707, Bin 407 offers varietal definition and approachability, yet still possesses structure and rich depth of flavour. Textbook Cabernet Sauvignon, the expressive Bin 407 demonstrates the reward of Penfolds multi-regional blending philosophy. The 2023 vintage is built for longevity, with the greatest reward reserved for those with the patience to cellar. Elegantly composed and finely structured, it reveals expressive dark Cabernet fruits, with savoury oak and understated earthy complexity. A burst of red fruit delivers a vibrant and lively mouthfeel. Steely tannins provide a structured backbone, complementing the darker tones of ripe forest fruit and a savoury hint of olives. A minerality, reminiscent of blue slate and ironstone, enhances the wine's complexity. The acidity ensures a balance that keeps the palate focused and cohesive, and its interplay with the tannins is expertly managed, allowing the wine to remain poised while delivering an abundance of flavoursome fruit. Subtle notes of tobacco lend a rich, earthy quality, contributing to a tightly-coiled palate. A young Bin 407 Cabernet Sauvignon certainly requires a decant to open up. It is not one to be hurried along. The biggest reward will come to those willing to subject their bottles to a long spell in the cellar.

Steeped in Penfolds winemaking tradition yet still embracing modernity, Bin 704 seeks to redefine Napa Valley Cabernet through a Penfolds lens. Being mindful of varietal nuances, regional essence and silk-like textural definition, the wine is nurtured in French barriques for maturation. Impressive is the cyclical nature of viticulture and winemaking, and Penfolds recognises that different hemispheres often end up being the mirror image of the other. The name Bin 704 draws inspiration from the 'mirror' or 'reverse' image of its Australian Bin 407 stablemate, a wine which also respects varietal expression. A silk-like flow, Bin 704 is still somewhat restrained during this embryonic stage. On the palate, this wine presents fennel/anise and black liquorice flavours that pave the way for fine yet powerful mouthcoating tannins. The weighty structure carries savoury nuances (artisanal charcuterie paired with tangy barberries) adding layers of complexity. Cherry nuances - both cherry pip tartness and white cherry subtle sweetness - play off each other elegantly. The finish is punctuated by notes of preserved salty plum, which linger long after the last sip.

A cabernet reflection of Grange. Full-bodied with proven cellaring potential, shows a mid-palate richness with saturated dark fruit flavours of blackberry and mulberry fused with notes of dark chocolate and liquorice. Bin 707 is a perfect Cabernet Sauvignon representation of Penfolds 'House Style': intensely flavoured fruit; completion of fermentation and maturation in new oak; expressing a Penfolds understanding of multi-vineyard, multi-region fruit sourcing.

A blend of Cabernet Sauvignon parcels sourced from vineyards throughout the Barossa. The fruit is fermented for up to 14 days, then aged for 12 months in a mix of French and American oak. Individual parcels of fruit are matured separately to maximise the blend's complexity and finalised through a selection process. The resulting wine is rich and concentrated with aromas of ripe dark berry fruits, blackcurrants and plums with mint and varietal leafy notes. The palate is plush with flavours balanced by fine, textural tannins.

Aromas of ripe red currants, blackberries with hints of sage, mint and toasty oak. The palate shows subtle red fruits while having some grainy long tannins. Dual appellation - Langhorne Creek and McLaren Vale.

The grapes were picked at between 13.5 to 14.0 Baume to produce the fruit flavours that are required to make this great wine. The grapes were fermented in a mixture of vessels to produce as much colour and flavour as possible. Portion of the wine underwent oak during fermentation and once dry, the remaining went to oak until the right balance was achieved. Careful tasting and blending, by Quarisa's winemaker, help produce this wine of style and great value for money.

Cool red berry fruits, but berry fruits that are also ripe and rounded. The tannins are smooth and welcoming, yet cabernet tannins will do what cabernet tannins will do: sweep through the palate. Accompanying them is a neat acidity and a slick, balanced alcohol. Cabernet sauvignon in equilibrium.

This is a wine of great intensity. It has distinctive blackcurrant and cassis fruit flavours. Subtle oak characters of cedar cigar box and spice are also evident. The tannins are fine and elegant - a hallmark of the varietal. The palate is well balanced, complex and fulfilling and lingers on the finish.
