Being mindful of varietal nuances, regional essence and silk-like textural definition, the wine is nurtured in French barriques for maturation. Impressive is the cyclical nature of viticulture and winemaking, and Penfolds recognises that different hemispheres often end up being the mirror image of the other. The name Bin 704 draws inspiration from the 'mirror' or 'reverse' image of its Australian Bin 407 stablemate, a wine which also respects varietal expression. A silk-like flow, Bin 704 is still somewhat restrained during this embryonic stage. On the palate, this wine presents fennel/anise and black liquorice flavours that pave the way for fine yet powerful mouthcoating tannins. The weighty structure carries savoury nuances (artisanal charcuterie paired with tangy barberries) adding layers of complexity. Cherry nuances - both cherry pip tartness and white cherry subtle sweetness - play off each other elegantly. The finish is punctuated by notes of preserved salty plum, which linger long after the last sip.

A cabernet reflection of Grange. Full-bodied with proven cellaring potential, shows a mid-palate richness with saturated dark fruit flavours of blackberry and mulberry fused with notes of dark chocolate and liquorice. The first sip seduces, the second reminds... Up front red fruits and maraschino cherry flavours quickly transition to the 'Noir-ish' - Black Forest cake, blackberry, black cherry, black... Sitting softens. A Christmas pudding mix of soaked fruits and rind offers a friendly hand. Similarly talc-like/velvety tannins are non-aggressive, politely acting as a conveyance. They almost appear coupled with cocoa/dark chocolate dust. Texturally woven, with all components well integrated and absorbed... inducing a sensory perception of roundness, of a lush film coated across the palate.

Penfolds Koonunga Hill Shiraz Cabernet is a reflection of the Penfolds winemaking style and philosophy. Sourced from premium vineyards across South Australia, the wine is known for its full-flavoured style with excellent Shiraz and Cabernet Sauvignon fruit, firm yet well-rounded structure and balanced oak. Made as a traditional 'Australian blend', the Shiraz component provides fleshy fruit flavour while Cabernet Sauvignon provides a frame of fine grained tannins. Date, boysenberry & sweet cinnamon abound. Pair with grilled meats, lamb chops or charcuterie.

A blend of Cabernet Sauvignon parcels sourced from vineyards throughout the Barossa. The fruit is fermented for up to 14 days, then aged for 12 months in a mix of French and American oak. Individual parcels of fruit are matured separately to maximise the blend's complexity and finalised through a selection process. The resulting wine is rich and concentrated with aromas of ripe dark berry fruits, blackcurrants and plums with mint and varietal leafy notes. The palate is plush with flavours balanced by fine, textural tannins.

Vibrant and expressive, the Pepperjack Central Otago Pinot Noir pours a brilliant scarlet with a subtle violet hue. The palate is rich, round, and textural, delivering juicy flavours of ripe raspberries, satsuma plums, and red currants, supported by fine cocoa-powder tannins for a soft, mouth-filling finish.

Pepperjack Mid strikes a balance between the art of traditional winemaking that Pepperjack is renowned for, and the science of cutting-edge de-alcoholisation and flavour retention technology. Still bursting with quintessential Pepperjack character, this mid-strength wine displays aromas of blackberries and plums with hints of pepper and spice. The palate is rich, round, and soft with concentrated berry fruits and soft velvety tannins.

A tribute to the Barossa's winemaking heritage, Pepperjack is crafted using a blend of traditional techniques and modern flair.
