Steely tannins provide a structured backbone, complementing the darker tones of ripe forest fruit and a savoury hint of olives. A minerality, reminiscent of blue slate and ironstone, enhances the wine's complexity. Steeped in Penfolds winemaking tradition yet still embracing modernity, Bin 704 seeks to redefine Napa Valley Cabernet through a Penfolds lens. Being mindful of varietal nuances, regional essence and silk-like textural definition, the wine is nurtured in French barriques for maturation. Impressive is the cyclical nature of viticulture and winemaking, and Penfolds recognises that different hemispheres often end up being the mirror image of the other. The name Bin 704 draws inspiration from the 'mirror' or 'reverse' image of its Australian Bin 407 stablemate, a wine which also respects varietal expression. A silk-like flow, Bin 704 is still somewhat restrained during this embryonic stage. On the palate, this wine presents fennel/anise and black liquorice flavours that pave the way for fine yet powerful mouthcoating tannins. The weighty structure carries savoury nuances (artisanal charcuterie paired with tangy barberries) adding layers of complexity. Cherry nuances - both cherry pip tartness and white cherry subtle sweetness - play off each other elegantly. The finish is punctuated by notes of preserved salty plum, which linger long after the last sip.

With each vintage, varietal batches are selected for Grandfather. These batches are individually aged in seasoned old oak casks before being blended together at 14 years of age. This blend is then introduced into the 'Grandfather Solera'. This Solera consists of six stages that are designed to fully integrate all components offering consistency and freshness with a final minimum average blended age of 20 years. Deep amber/mahogany in colour with green-gold tinges, this is a blend of the finest old tawnies. The palate shows classical Penfolds fruitcake, liquorice and vanillin oak flavours with a sweet full and round mid-palate, and a finish that persists on and on.

Penfolds Koonunga Hill Shiraz Cabernet is a reflection of the Penfolds winemaking style and philosophy. Sourced from premium vineyards across South Australia, the wine is known for its full-flavoured style with excellent Shiraz and Cabernet Sauvignon fruit, firm yet well-rounded structure and balanced oak. Made as a traditional 'Australian blend', the Shiraz component provides fleshy fruit flavour while Cabernet Sauvignon provides a frame of fine grained tannins. Date, boysenberry & sweet cinnamon abound. Pair with grilled meats, lamb chops or charcuterie.

A blend of Cabernet Sauvignon parcels sourced from vineyards throughout the Barossa. The fruit is fermented for up to 14 days, then aged for 12 months in a mix of French and American oak. Individual parcels of fruit are matured separately to maximise the blend's complexity and finalised through a selection process. The resulting wine is rich and concentrated with aromas of ripe dark berry fruits, blackcurrants and plums with mint and varietal leafy notes. The palate is plush with flavours balanced by fine, textural tannins.

Bursting with dark cherry and luscious cassis, this Pinot is balanced by silky tannins and a supple mouthfeel. Savoury cocoa notes and resinous spices from oak and whole bunch fermentation add depth, drawing the red and blue fruits across the palate, melding to a complex and concentrated finish.
